Monika Salted Tiny Shrimp, also known as Bagoong Alamang, is a traditional Filipino fermented shrimp condiment with a distinctive salty, savory and umami-rich flavour.
Made with 60% tiny shrimp (Acetes spp.), this classic Filipino ingredient is widely used as a condiment and cooking ingredient. It is traditionally served with green mango, steamed rice and vegetables and is also used to add rich seafood flavour to Filipino dishes.
Bagoong Alamang can be sautéed with garlic, onion, sugar and chili to create a delicious homemade shrimp paste condiment. It is also an essential ingredient in dishes such as Kare-Kare and Binagoongan.
