Monika Fermented Salted Fish, also known as Monamon Dilis, is a traditional Filipino fermented fish condiment with an intensely savory, salty and umami-rich flavour.
Made from silver-stripe round herring (Spratelloides gracilis) fermented with salt, this classic Filipino ingredient adds depth and authentic flavour to a wide range of dishes.
Use it as a condiment with steamed rice and vegetables or as a flavouring ingredient in Filipino dishes, soups, stews, stir-fries and sauces. Its concentrated salty flavour means a small amount can add plenty of character to your cooking.
