Monika Balayan Fermented Fish Sauce, also known as Bagoong Balayan, is a traditional Filipino fermented fish condiment with an intensely savory, salty and umami-rich flavour.
Made with 50% fermented fish extract, this distinctive Filipino sauce is excellent for adding depth to soups, stews, vegetable dishes, marinades and dipping sauces. Its concentrated flavour means only a small amount is needed to bring authentic Filipino character to your cooking.
Bagoong Balayan can also be mixed with calamansi or lime, chili, garlic and other seasonings to create a flavorful Filipino-style dipping sauce (sawsawan). It pairs particularly well with grilled or fried dishes, vegetables and steamed rice.
